At times, whole turkeys may have a Hock Lock attached to the drumsticks resembling traditional trussing. This Hock Lock clamp in our kits is made of heat-resistant plastic and is safe to keep on during cooking as it helps maintain even heat distribution by keeping the drumsticks close to the turkey.
To remove the Hock Lock, simply unhook the drumstick tips from the loops and pull out the clamp from the bird. If stuffing the turkey, take the drumsticks out of the loops before stuffing and then replace them once the stuffing is inside.
